Ingredients
1 lb ground pork
½ onion – chopped
2 garlic cloves - minced
2 carrots – chopped
1 small broccoli clown - chopped
A liberal pouring of soy sauce (2 tablespoons)
1 heaping tablespoon tomato paste
1 cup old red wine
8 servings of instant mashed potatoes
Celery salt – to taste
Sautee the onions and garlic in some olive oil. I used a cast iron pan.
When they’re translucent, add the pork and brown.
When the meat looks cooked, add the veggies and celery salt.
After a few minutes add the soy sauce and tomato paste.
After a few minutes add the red wine.
Simmer for about 5 minutes while you make the instant mashed potatoes.
Put the meat/veggie mix in a backing dish.
Spoon the mashed potatoes on top.
Bake for 20 minutes at 400 degrees.
Makes one dinner and 3 lunches, or about 4 servings.
